You know how sometimes you meet someone and the just make you want to be a better person? That’s how I felt when I first met Christy. The first time I ever saw Christy Jordan was on an episode of Paula Deen a few years ago and I just loved her sweet personality. I followed her blog for quite a while and then I got to meet her in person while I was in Disney World for a conference, thanks to this crazy blogging world that we live and work in.

She’s so sweet and nice that you just can’t help but to smile when you’re around her. I got to travel to Sandestin, Florida with her earlier this year and I hope our paths cross again in the near future!A few months ago, Christy asked me if I wanted to come aboard and co-host Meal Plan Monday with her and Stacey (Southern Bite) and Donya (A Southern Soul). So this year Christy published her 3rd cookbook and I got a change to get my hands on a copy to review!

This little cookbook is beautiful and I just love flipping through the pages.

There are recipes, cooking and baking tips as well as little stories from Christy about her family and life.

As always, Christy’s recipes are simple and easy to follow. If you love good Southern recipes you’ll fall deeply in love with this cookbook.

Plus I also to mention that I am in love with the little Pyrex drawings throughout the cookbook. You see that blue and white pattern? I LOVE that Pyrex pattern and I can’t find it anywhere, like the real ones I mean. I have a few Pyrex dishes but the blue and white ones are my favorite. I have some blue and white replica ones from Target but they’re not the same!

This recipe is just one of the fantastic recipes in Christy Jordan’s Cookbook, “Sweetness“. Ihad permission from her publisher to make a re-print any recipe I wanted from the cookbook so I sat down one night with Thomas and started to look through to pick out the perfect one for the blog.

I was just getting ready to text Christy and ask her which one I should make when I turned the page and saw the Cream Cheese Divinity!

Christy’s recipe are simple and I love that about her. Nothing super fancy or over the top. Her recipes are perfect little collections of simple southern dishes and if you know me you know that I love those types of recipes.

This cream cheesedivinityrequires just 5 ingredients and takes maybe less than 15 minutes to mix together.

While this isn’t super traditional SouthernDivinity I might dare say that I like this version better! It taste just like my favorite cream cheese icing but in candy, bite size form.

If you’ve ever made myHummingbird Cakethen you know what I’m talking about. Heck if you’ve made any of my cakes you know what I mean. I love cream cheese icing and these little treats taste just like it.

I made a batch the other day and was sure to package up some for my mom and then sent the rest to work with Thomas. He came home from work to tell me that these little cream cheese divinity candies were a hit!

Oooo speaking of giving these as gifts, guess whats in the back of Christy’s cookbook………..

Cream Cheese Divinity

Yield: MAKES 50-60 PIECES

A super easy take on the Southern candy, Divinity. A no fail Cream Cheese Divinity recipe that will keep you coming back for more! It's impossible to eat just one piece!

Ingredients

  • 8 ounces softened cream cheese, at room temperature
  • 3 tablespoons butter softened, at room temperature
  • 7 -8 cups powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla

Instructions

Place cream cheese, butter, and lemon juice in a mixing bowl. Beat with an electric mixer until fluffy.

Add in vanilla and gradually add in sugar (beginning with 7 cups), beating until all is well blended. Add more sugar if needed to make it a thick cookie dough consistency.

Once well blended, shape into 1 inch balls and dip bottoms into confectioner's sugar before placing on waxed paper or parchment. Press a pecan half into each one. Allow to dry for 2-3 hours and then store in a sealed container on the countertop if they will be eaten within a day or two, or in the fridge to keep up to 2 weeks.
