Growing up my dad’s favorite meal to make for us was grilled cheese with tomato soup! It’s still one of my favorite meals, only NOW I like to DRESS UP my grilled cheese! TODAY is National Grilled Cheese day, so the perfect day to enjoy this Mediterranean grilled cheese!
I LOVE the flavors from other cultures, I think most of my favorite burgers or grilled cheese creations are inspired by the food from another country! This grilled cheese is no exception, with three cheeses-mozzerella, goat cheese and feta – there is a lot to love about this sandwich!

Ingredients
- 2 tbsp oil
- 6 oz spinach
- 1 lrg red onion
- 2 tsp garlic diced
- 8 Tbsp butter softened
- 10 slices artisan bread any flavor you like
- 1 rotisserie chicken breast or sauteed chicken breast ripped up
- 5 slices mozzerella cheese
- 6 oz crumbled feta
- 2 oz crumbled goat cheese
- 1 tomato diced
- 1.5 oz Kalamata olives chopped

Instructions
In a saute pan heat up the oil
cook the red onion, after a few mins add the spinach, and when it starts to shrink add the garlic and cook until translucent
Heat up your pan or skillet to medium
butter one side of each slice of bread
with the butter side out - layer the mozzerella, chicken, spinach/onion mixture, olives, tomatoes and then the goat and feta cheeses, top with another slice of bread (butter side out)
cook each side until golden brown, slice and serve!

I personally thought I added too much of the kalamata olives, I’ll be a little more sparing next time, but that’s the great thing about grilled cheese! you can personalize it for each person, my husband wanted MORE of the kalamata olives! They have a strong flavor for SURE so if you don’t like ityou can use regular olives instead!

This looks fantastic! I love goat cheese, but no one else in my family will eat it. I will definitely have to buy some to make these sandwiches!

then use the rest in my stuffed burgers 😉 ha, my kids don’t love goat cheese either, but I sure do!
oh feta and goat cheese sound so amazing! My son who is 7 has been dying for me to buy goat cheese, don’t ask me why. I may have to make this for him 🙂
